Cheesy Zucchini Fritters (Cheesy Zucchini Pancake)
Recipe: Cheesy Zucchini Fritters (Cheesy Zucchini Pancake)
INGREDIENTS
- 2 cups shredded zucchini (2 small zucchinis)
- 2 stalks green onion, sliced (optional)
- 1/2 cup all purpose flour (I used gluten free pancake mix, it worked!)
- 2 large eggs, beaten
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded parmesan cheese
- 1/2 cup Ricotta cheese (can be substituted with mozzarella cheese)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons cooking oil
- Salt and pepper to taste
- Sour cream
- Dill or chives (optional)
METHOD
1. Place shredded zucchini in a large bowl. Using a clean paper towel, press and squeeze out the moisture until excess water has been removed. Do this several times squeezing as much moisture out as possible.
2. Add all the ingredients (except for cooking oil, sour cream and dill) into a bowl, mix well until mixture is combined.
3. Heat cooking oil in a large skillet over medium high heat. Add zucchini batter (about size of an ice cream scoop) to the skillet once oil is hot. Cook for about 2 -3 minutes on each side, or until both sides turn golden brown.
4. Serve warm with sour cream and dill or chives if desired.
