Easy Carrot Top Omelette


Recipe: Easy Carrot Top Omelette 

INGREDIENTS (4 servings)

  • 4 large eggs, whisked
  • 4 tablespoons finely chopped carrot top (leaf part only)
  • 2 tablespoons butter (or 1 tablespoon olive oil)
  • 1/8 teaspoon freshly ground black pepper 
  • 1/8 teaspoon salt 
  • 1/4 cup heavy cream or milk (optional)

INSTRUCTIONS

1. In a medium bowl, whisk eggs with cream, salt and pepper until blended. 

2. Melt butter in a nonstick pan or skillet over medium high heat. Pour egg mixture into pan. Tilt pan to let egg mixture evenly spread in the pan.  

3. Evenly sprinkle chopped carrot top on top of egg mixture. Continue to cook until just set, gently flip, cook for 20 more seconds. 

4. Transfer omelette to a serving plate, serve warm.
